Just made a frittata: Low carb, low sodium, high fiber, high protein and pretty to boot! I will post pics when it is done!
Sprayed the bottom with olive oil
Used a Mandolin to slice one large zucchini
covered the bottom with the zucchini slices
sprinkled a layer of sea salt
covered with frozen broccoli pieces and placed in the oven while I prepared the eggs
In a bowl I put:
21 seasoning salute
3/4th cup of mild salsa
1/4th cup of fresh grated cheese
I whisked the ingredients until fully mixed
poured over the already heated broccoli and zucchini
topped with some more cheese and baked at 400 degrees until golden brown.
