Veggetti Spaghetti

All organic veggies
Cherry tomatoes
Summer squash
Zucchini
Scallions
Red pepper
Olive oil
Sea salt
Black pepper
Basil
21 seasoning salute (Trader Joe’s)
Tossed with fresh grated Italian cheese blend (skip this step if you would like a vegan meal!)

Variations:

You can play with this by adding other ingredients like artichoke hearts, black olives, or mushrooms. Throw a bit of white wine into it to kick up the flavor a notch.

Take a large frying pan and saute  the scallions in olive oil first. When the scallions are soft add the peppers. add the sea salt at this time and any other seasonings you would like. Add the rest of the vegetables. Saute until everything is cooked but still vibrant in color. I threw some cheese in at the last minute, but you can skip this step if you are vegetarian!

 

I served with roasted potatoes. I will blog this recipe later.
