Avacado Ranch Chicken Salad

I have been long absent from this blog, but have still been busy cooking. I love looking at Pinterest for inspiration and this is another one. I love a good chicken salad and have been wanting to try something new.

  • 1 lb of fresh chicken breast
  • 3/4ths a cup of organic ranch dressing
  • two small sweet peppers diced
  • two celery stalks diced
  • 1 medium avocado diced
  • two scallions chopped
  • Lemon
  • Dill
  • Pepper
  • Garlic Powder
  • little bit of lemon juice

Pre heat the oven to 4oo

Cut up the chicken breasts into pieces and cover with the dressing add the dill and garlic powder.

Cut up the veggies and put them into a bowl.

Add the lemon juice and place the  veggies in the fridge while the chicken is cooking.

flip and stir the chicken half way through about 15-20 min

When the chicken is done, shred (in the dressing) and drain off most of the dressing and chill.in a separate bowl.

combine the ingredients for an amazing chicken salad!!

I ate mine on cucumbers, but use your creativity!
