Chicken and wild grains

  • 1.5 lbs of chicken tenders
  • .5 cup frozen sliced zucchini
  • .5 cup of frozen broccoli
  • .5 cup frozen cauliflower
  • 1.5 cups of ancient grains with wild rice
  • .5 cup jasmine rice
  • 3 cups vegetable broth
  • 1 reg can of diced tomatoes
  • 2 tbs of lemon juice
  • 2 tbs avacado oil
  • Thyme
  • Garlic powder
  • Salt
  • Basil
  • Trader Joes everyday seasoning

Cut and brown the  chicken in a deep skillet or soup pot with the oil and lemon juice. You could add white wine too. Add spices to taste

Add frozen veggies and more spices to taste

Add broth, diced tomatoes,  grains.

Cook on medium low heat for about 30 min.

Stir occasionally
