Still at a 25 pound weight loss. I was off track for a while, but managed to keep it off!
- 1 lb Skinless, boneless chicken breasts (Skip if you are vegetarian and add another veggie. Mushrooms or peppers are a great option)
- 2 Medium to large zucchini
- 1/2 lb of broccoli cut up
- 3 cups of Mirepoix
- 1/2-2/3rds cup of lentil and rice mix
- 1 can of diced tomatoes
- 1 tbs of avocado oil
- 3 cups of water
The seasoning is to taste
- Sea salt
- 21 seasoning salute
- Italian Herbs
in a large/deep pan heat up the avocado oil and place in the mirepoix. Add some of your seasoning at this point. Sautée until the onions are slightly translucent.
Add 1 pound of chicken, I used thin sliced chicken breasts (cut in half), you can use tenders. When doing a one pot dish I prefer smaller pieces, because it is easier to stir
When the chicken looks cooked, most of the way, then add the broccoli and zucchini. Add some more seasoning.
Add the can of tomatoes and water. Let everything simmer for a bit on medium to high heat.
Add the Rice and lentils, bring back to a boil then bring the heat down to a low simmer and cover until the rice is soft. (About 35 min)
Total cooking and prep time about an hour.
For added flavor try some fresh grated Parmesan!
I use pre-cut mirepoix and frozen broccoli. It is a bit more expensive, but time is valuable too!
I also use the spatula to gently half or chunk the chicken when it is cooking. This saves time and cleaning extra utensils. Do not use metal spatulas, as they will scratch the pan. If your chicken is mostly cooked then this should be easy.
